Description
Blade steak, cut from the chuck or shoulder section of the steer, is a beautifully tender steak that has a chewy strip of connective tissue running through the middle. This gives you two options when cooking it: you can braise it until the tissue breaks down and the whole thing is tender, or you can remove the strip and cut the meat into small pieces for stir-fry or sauteeing.
