"DRY" DOES NOT MEAN THE SCALLOPS ARE DEHYDRATED; INSTEAD, IT IS A WAY OF DISTINGUISHING THEM FROM CHEMICALLY-TREATED "WET" SEA SCALLOPS, (THE CHEMICAL BATH WHITENS THEM AND PLUMPS THEM UP WITH WATER WEIGHT, BUT MAKES THEM IMPOSSIBLE TO SEAR PROPERLY). THE BEST WAY TO COOK THESE SCALLOPS IS TO SEAR THEM: PAT THEM DRY, SEASON WITH SALT AND PEPPER, AND COOK IN A LITTLE HOT OIL IN A SKILLET, FLIPPING ONCE, UNTIL THEY DEVELOP A BEAUTIFUL BROWN CRUST ON BOTH SIDES.
