Description
The eye of round roast, cut from the steer’s back leg, can look surprisingly like a beef tenderloin, but it’s much leaner and more exercised. The best way to cook is a hot sear followed by a low, slow roast, or it’s also perfect for pot roast, braising, or Crock Pot cooking.
