Petite lamb rib chops, as the name suggests, come from the rib section of the lamb. Their meat is exceptionally tender and mild in flavor, and their size makes them perfect for hors d’oeuvres...or serve two to three chops for a main course. Our butchers “French” the ribs (remove the excess fat and tissue from the bones) for a clean, elegant look. They cook very quickly, whether pan-seared, grilled, or oven-roasted.
