Description
The most tender cut of beef (and one of the most prized), filet mignon is cut crosswise from the tenderloin muscle that runs from the sirloin to the top loin. Because it is so tender, it can be cooked quickly over high heat: think searing, grilling, or a quick sear followed by a short roast. Because it’s fairly low in fat, one common preparation is to wrap the filet in bacon before cooking.
