Description
The smallest of the quahog species, these clams are named after Long Island’s Little Neck Bay. They’re about 1½ to 2 inches wide (7 to 10 per pound) and have sweet, tender meat. They’re delicious raw, atop a white pizza, or in clam spaghetti. (You can even keep them in the shell!)
