LITTLE NECKS ARE THE SMALLEST VARIETY OF HARD-SHELL CLAMS (ALSO CALLED QUAHOGS). TO QUALIFY AS LITTLE NECKS, THERE SHOULD BE 7 TO 10 PER POUND. AS THE SMALLEST, THEY ALSO HAVE THE TENDEREST MEAT, AND ARE THE MOST VERSATILE FOR COOKING. STEAM THEM, GRILL THEM, FRY, SERVE RAW, OR COOK IN A CHOWDER.

Description

The smallest of the quahog species, these clams are named after Long Island’s Little Neck Bay. They’re about 1½  to 2 inches wide (7 to 10 per pound) and have sweet, tender meat. They’re delicious raw, atop a white pizza, or in clam spaghetti. (You can even keep them in the shell!)
