Delicate skin, soft, sweet, juicy bite. One of the oldest pear varieties in the U.S. (developed in the 1700s) and still one of the best. Its delicate skin, soft flesh, and sweet, juicy flavor make them excellent for eating out of hand. They tend to lose their shape in cooking, so they’re great or pear sauce or pear butter, but choose a different variety for pies.
